If I may quote one of our suburban locals: “If we want to try something new, we will go to Philly.” People in the burbs want the same fare with almost no flexibility. Stoic and boring is who we cook for. Foodies in the burbs barely make up 20 percent of clientele. It is frustrating to keep things fresh when our bread-and-butter customers hate any form of change.
