Phil Markowski, long time brewer at Southampton Publick House on Long Island, will join Two Roads Brewing Co. as its brewmaster on April 16.
Two Roads is a a contract-focused brewery which is scheduled to to open in Stratford, Conn. next September. Principle owner and founder Brad Hittle, an industry vet whose resume includes a four year stint at Pabst Brewing Co. as chief marketing officer during that brand’s hipper-than-hip heyday a few years back, says the company will focus on the Northeast market and is installing a 100-barrel Rolec brewhouse and a 300 bottle per minute packaging line.
I’ve been sitting on this story for months. Hittle gave me the scoop when I interviewed him for story for New Brewer magazine back in early December and just sent me a confirming email. Our talk was off-the-record at the time, of course. He said negotiations were still going on: “I’ve known Phil since 1990. He’s a good friend of mine and he’s the perfect guy to do this. He’s very versatile, an engineer who understands the equipment as well as the science and art of brewing. He’s just such a good person in addition to all that and intellectually curious about everything.”
The point of that New Brewer story, which is in the current issue, is that contract brewing is likely to be a major factor in the growth of craft over the rest of this decade. Phil would appear to agree.SHARE
